Lemony Kale Salad
This fresh salad is vibrant and delicious with all the benefits and protein of kale and bright crunch of the other veggies. This is a perfect lunch, side dish, or base salad. You can easily add baked salmon or chicken to make it a heartier meal.
Ingredients
- 1 bunch Green kale Removed from veins and shredded
- 3 medium Radishes Cut off ends and cut into small matchsticks
- 1 medium to large Carrot Grated
- 1/2 Red pepper Finely diced
- 21/2 Tablespoons Fresh lemon juice
- 1/4 cup Extra virgin olive oil
- 2-3 cloves Garlic crushed or finely chopped
- 1/2 - 3/4 teaspoon Sea salt
- Fresh ground pepper to taste
Instructions
- Mix shredded kale, chopped radishes, and grated carrot together and toss to combine
- In a small bowl, mix olive oil, lemon juice, chopped garlic, and sea salt and mix to combine
- Pour half of the dressing over the salad and massage the kale with your hands until it is soft and tender
