Lemony Kale Salad
This fresh salad is vibrant and delicious with all the benefits and protein of kale and bright crunch of the other veggies. This is a perfect lunch, side dish, or base salad. You can easily add baked salmon or chicken to make it a heartier meal.
- 1 bunch Green kale Removed from veins and shredded
- 3 medium Radishes Cut off ends and cut into small matchsticks
- 1 medium to large Carrot Grated
- 1/2 Red pepper Finely diced
- 21/2 Tablespoons Fresh lemon juice
- 1/4 cup Extra virgin olive oil
- 2-3 cloves Garlic crushed or finely chopped
- 1/2 - 3/4 teaspoon Sea salt
- Fresh ground pepper to taste
Mix shredded kale, chopped radishes, and grated carrot together and toss to combine
In a small bowl, mix olive oil, lemon juice, chopped garlic, and sea salt and mix to combine
Pour half of the dressing over the salad and massage the kale with your hands until it is soft and tender
